Super Simple French Dip Roast

With 3 kids all involved in numerous after-school activities, our lives are super hectic!  But, everybody still has to eat…and I prefer that it be something relatively healthy and full of protein.  One of my favorite things about crockpot cooking is that everyone can eat when it’s best for them.  All of our activities begin and end at different times, with some people not getting home until 8:30/45.  This crockpot roast recipe is perfect for those nights.  I always look at my calendar the week before and plan out the next week’s meals based on activities…it makes my life so much easier!  This recipe only has 4 ingredients, and that includes the roast!!!!  It’s so easy, and so delicious!  You can serve it as french dip sandwiches with au jus or  you can just serve it as pot roast with the au jus over the top and over some mashed cauliflower/potatoes on the side with some rolls and a green veggie!  ENJOY Y’ALL!!

PS – If you aren’t using the slow cooker liners when you use your crockpot, you’re MISSING OUT!!!!  ZERO CLEANUP!



3-4 lb beef chuck roast

1 can french onion soup

1 can beef broth

1 bottle beer

Put all ingredients in a crock pot and cook on low for 6 hours.  Feel free to throw in some mushrooms the last hour or two if you want!
